Professor Weikle received her undergraduate and master's degree in human nutrition from Winthrop University. She is a Licensed Registered Dietitian in the state of South Carolina.

She has worked at several area hospitals, including 13 years at Piedmont Medical Center as assistant director of Patient Services and chief clinical dietitian. She now is in private practice for herself as owner of Nutrition Network. She works in various doctor's offices in the Rock Hill and Fort Mill, S.C., area. Weikle also teaches part-time in the Department of Human Nutrition at Winthrop University, where she is an adjunct professor and serves as a member of the department's Academic Advisory Board.

Weikle is active in both the local and state dietetic association. She served as president of the South Carolina Dietetic Association from 1995-1996 and 1998-1999.

She has received various honors in her field, including: Outstanding Dietitian of the Year, South Carolina Dietetic Association, 1996; Outstanding Dietitian of the Year, Catawba Dietetic Association, 1996; Recognized Young Dietitian of the Year, Catawba Dietetic Association, 1989 and 1990; the Commendation Award, South Carolina Dietetic Association, 1995 and 1991; and the Distinguished Service Award, South Carolina Dietetic Association, 2000.
