Weikle Selected to S.C. Panel for Dietetics and as an Outstanding Dietetics Educator

ROCK HILL, SOUTH CAROLINA - Elizabeth Weikle ’83,’ 85 of Winthrop University’s Department of Human Nutrition was confirmed March 31 by the S.C. Medical Affairs Committee as a member of the S.C. Panel for Dietetics.

The 12-member panel licenses and regulates licensed individuals engaging in the practice of dietetics. Members also investigate complaints and conducts application and disciplinary hearings in accordance with state laws and regulations. In the last decade, South Carolina has made it a violation of the Dietetics Practice Act to practice without the proper licensure and failure to obtain a license can result in action by the Board.

Weikle, who has worked at Winthrop as an adjunct faculty member since 1992, is one of three representatives from the education sector.

The panel members will meet twice a year and come from three different areas of expertise. Members may also advise the governor and other political leaders on issues of the day, such as food insecurity.

In addition to her selection to the dietetics panel, Weikle was selected this year as the 2021 Outstanding Dietetics Educator.

The selection committee that chose Weikle said she is the kind of teacher every student wishes to have. “Our committee was very impressed by all of her leadership with South Carolina Academy of Nutrition and Dietetics (SCAND) and the Catawba District. Her references spoke so highly of her, and we at SCAND are so proud of her hard work. She is truly making an impact on these students,” said Brooke Brittain of the Department of Public Health Sciences at Clemson University.

Wanda Koszewski, chair of the human nutrition department, said Weikle has been quite prolific both as an educator and practitioner. “Elizabeth is known across the state for mentoring students through her continuing education presentations and various leadership positions in the South Carolina Dietetics Association,” said Koszewski, who nominated Weikle for the honor. “She understands the profession of dietetics from all angles. We continue to benefit from her commitment to our students.”

Weikle holds an undergraduate and a master’s degree in human nutrition from Winthrop. She was working at Piedmont Medical Center (PMC) as its chief clinical dietitian and food service director when she started teaching a nutrition class a semester at Winthrop in 1990. When she left PMC in 2000 to work in private practice, she started teaching more undergraduate classes.

She still teaches the introductory course, as well as a practicum course for students to work 100 hours in the field of nutrition.
